Our fries – artisanal baking in Amsterdam-Zuid
No Flemish or French fries: at Frietsteeg, we simply make good Dutch fries. Freshly cut every day, prepared with care and cooked fairly.
We use potatoes from Dutch soil – varieties suitable for fries and with great taste. First, we pre-fry the raw fries at a low temperature, so the inside cooks nicely and most of the moisture disappears. Then, we cool everything back to 5⁰C, so the fries become extra crispy when finished frying.
We leave the skin on – that adds more flavor, reduces cutting loss, and fits our approach: working without unnecessary waste. We fry the potatoes in 100% vegetable oil. The result is a golden-yellow fry, crispy on the outside and soft on the inside.
